Chickpea Pasta Salad
serves 4 to 6

Ingredients
1 cup pasta
2 tablespoons olive oil
1/2 teaspoon salt
3 tablespoons lemon juice
1/4 teaspoon black pepper
12oz. artichoke hearts (drained)
15 1/2 oz. can chickpeas (rinsed, drained)
4oz. feta cheese
2 large tomatoes, chopped
1 teaspoon dried dill
1 1/2 cups Cottage Cheese

Directions
Cook pasta according to directions
transfer to colander and rinse with cold water, drain
Pour into large bowl
Add olive oil, salt, lemon juice, and black pepper
Add artichoke hearts to mixture
Then add chickpeas, feta cheese, cottage cheese and dill
Toss gently
Add tomatoes and toss again.
