Smoked Salmon Mashed Potatoes
To get you started creating your own mashed potato masterpieces, we've come up with some very easy recipes based on Creamy Mashed Potatoes (below).
They're so good, you may consider making them the main course!
CREAMY MASHED POTATOES
6 (3/4-cup) servings 6 (3/4-cup) servings
Ingredients:
Combining russets and Yukon golds in these mashed potatoes gives them a wonderfully fluffy texture and rich, buttery look.
1 1/4 lb. Yukon gold potatoes (3 to 4 medium), peeled, cut into 2-inch pieces
1 lb. russet potatoes (about 2 medium-large), peeled, cut into 2-inch pieces
3-oz. pkg. smoked lox-style salmon
1 1/2 teaspoons salt, divided
3/4 cup hot whipping cream
1/8 teaspoon freshly ground pepper
Directions
For Salmon:
Reduce whipping cream to 1/3 cup; slowly add to mashed potatoes.
Stir in 1/2 cup room temperature sour cream.
3-oz. pkg. smoked lox-style salmon, Chop stir into potatoes.
Eliminate salt.
For Potatos:
Place Yukon gold and russet potatoes in medium saucepan; cover with water
Add 1 teaspoon of the salt
Bring to a boil over medium-high heat; reduce heat to medium
Boil 20 to 25 minutes or until very tender
Drain; return to saucepan over lowest heat
Mash with potato masher; slowly add cream
Stir in remaining 1/2 teaspoon salt and pepper.
Note
If Your Mashed Potatoes are Runny
Thicken runny mashed potatoes with uncooked instant mashed potato flakes.
Add a little at a time until you achieve the desired texture.
PER SERVING: 220 calories, 9.5 g total fat (6 g saturated fat), 3.5 g protein, 31.5 g carbohydrate, 35 mg cholesterol, 575 mg sodium, 3 g fiber.
