Army Crockpot Chilli

Food Service Chilli Recipe
5 quart crock pot or roaster is needed

Ingredents
2 pounds (900g) beef chuck, cut into small pieces
1 pound (450) hot Italian sausage (oh boy Oberto), remove from casings
1 pound (450) sweet Italian sausage (oh boy Oberto), remove from casings
2 large Walla Walla Onions, chopped
1 large green pepper, seeded and chopped
4 tablespoons (60ml) canned, sliced jalapeno peppers (half 4 oz can)
4 tablespoons (60ml) Chilli powder
2 tablespoons (30ml) oil
2 tablespoons (30ml) ground cumin
1 teaspoon (5ml) black pepper
2 16 oz (450gl) can kidney beans
28 oz diced tomatoes, undrained
12 oz tomato paste
2 cans (15 oz) chicken broth

Directions
pour it all in to the pot, oil first
cook at high or 400F (200C) for 30 minutes
reduce temp to muedium or (275F (130C)
cover and cook for 2 hours, strring every hour
